Gluten Free Granola!

What do our fitness instructors do on their days off? Prep their food for the week ahead and try out new recipes! If you have a wheat intolerance or are coeliac this delicious gluten free granola is a perfect choice for breakfast, easy to make, easy on the tummy and extremely yummy!!   Ingredients 1/2 cup cranberries 1/2 cup raisins 1/2 cup flakes almonds 1/2 cup pecans 1/2 cup -1 cup mixed nuts (crushed) 2 handfuls pumpkin seeds 2 handfuls sesame seeds cereal sized bowl jumbo gluten free oats 3 tbsp coconut oil 4 tbsp high grade maple syrup   Method Simply throw all your ingredients into a big mixing bowl apart from the dried fruit and give it a stir to make sure they are well mixed. Add in your coconut oil, this is where you get your hands dirty! Make sure the oil is well mixed so nothing is left dry. Add in your maple syrup and mix, mix, mix! Put the mixture onto a tray lined with baking paper put little gaps in between the mixure with the back of a wooden spoon so it doesn’t turn into one big flapjack. Put into the middle of the oven at 170 C. Leave for 25 mins, check periodically. Add your dried fruit for the last 5 mins. Remove from the oven, leave to cool.
